I got hit with a nasty stomach virus this week so I decided to make arroz caldo when I felt well enough to finally eat something. I realized the Instant Pot would be perfect for this. And it was! Growing up I remember always burning my hands trying to shred the chicken my mom had boiled because I didn't want to wait any longer than I had to for the arroz caldo! With the Instant Pot, I just threw everything in, pressed some buttons, and walked away. When it was done the chicken was so tender, I just stirred the pot a bit and the chicken was shredded! No more burned fingers! AND, I took the skins off the thighs and fried a couple up for a crunchy garnish. So good!

Grandma Betty LeBuffe
In January, Adrian's beloved Grandma Betty passed away two days after she turned 95. She was an amazing lady and we were all so lucky to have her in our lives. She absolutely adored her grandchildren and great-grandchildren and loved visiting. She will be greatly missed.
Adrian's cousin Alex put together a fantastic album of photos of Betty, with a bit of information on her life, as well as an excerpt from her memoirs. Click here to take a look.
This inspired me to put together my own album of Betty photos. Click here to look at that album. Here are a few of the photos.
The bright side of Grandma Betty's funeral was that we got to visit with lots of LeBuffes. Here are a few photos. Click here to see more photos from the funeral. Photos courtesy of my mom. Thanks, Mom!

January 2017
January brought the first big blizzard of the winter, and opening Christmas presents. Christmas is such a flood of gifts for these two that I try to have them open the gifts slowly, one at a time. This way they give each gift their full attention and get the most out of it. Or at least that's my hope. One of the gifts they opened were the Kiwi Crates from Ninong. They each get a fresh crate every month for 6 months, courtesy of Ninong and Tito Erik. They've loved them so far. Another gift they opened was a science/chemistry kit that Ninang gave to Veronica. They were adorable in their little safety glasses learning about acids and bases. Max also got a cool light-up car that he assembled.
Veronica was the Mystery Reader in Max's class. She read them Rosie Revere, Engineer, definitely a household favorite. Click here to go directly to the video of Veronica reading the book to Max's class.
Also in January were a visit to Filipino School and a few photos of Max in his karate class.
Click here to see more photos and videos from January 2018. There's a great video of the kids dancing near the end of the month.

Max's class learned about Magellan and how he came to the Philippines and tried to Christianize them.
Do you recognize the Chocolate Hills of Bohol? Look carefully!
They learned how the Filipino datu (chief) Lapu Lapu resisted and managed to keep Magellan's ships from his village by using the coral in the ocean as a natural buffer.
Do you see the coral? That's me playing Lapu Lapu in the head scarf!
